Smoked low. Fried hot. Loaded irresponsibly.
Where & when
Coming summer 2027
We're rebuilding a gutted trailer into a four-season smokehouse on wheels. Sign up and we'll tell you the day we open, then every day after that where we're parked.
Off the smoker
Pork, chicken and sausage smoked low and slow, then piled onto potatoes, fries, tacos and griddled melts.
The Chokehold
Pulled pork, cheddar, sour cream, crispy onions and house BBQ on a smoked potato, fries, mac or a bun.
Choked-Up Nachos
House chips loaded with smoked meat, queso, pico, jalapeños, sour cream and house sauce.
Smoke-Fried Wings
Smoked first, fried to order, tossed in any house sauce.
Three-Way Choke
Pork, chicken and sausage in one griddled three-cheese melt. Bring a friend. Or don’t.
Open when everyone else closes
Most food trucks up here shut down in October. We’re building ours with insulation, heat and winter plumbing so we can keep serving in January. Sled season, cider season, grad season: if we can get there safely, we’ll be there.
Catering & parties
Grad parties, weddings, company lunches. Bring the truck, or get trays of smoked meat dropped off hot.
Own a taproom?
No kitchen? We’ve got one on wheels. Your guests eat, stay and order another round.
The name gets attention. The food earns the customer.
